Sautéed Spinach with Tomatoes

Sautéed Spinach… but Better!
These days everyone incorporates fresh baby spinach into smoothies, cold spinach dips, and salads, and rarely makes it into ‘a side dish’ anymore; at least I think so. But, we love sautéing fresh spinach and serve it as a side dish, and we make it often. Even our spinach with garlic and olive oil is still one of our favorites!
But this recipe for sautéed spinach is even better! It’s sautéing fresh spinach with fresh tomato, garlic, and olive oil, and that makes the entire difference. And, it happens to be my husband’s favorite recipe.
It’s quick and easy to make, and this recipe for sautéed spinach with tomatoes always turns out sensational!
No need to embellish with extra ingredients or weigh it down with creams or cheese. It’s always tastes amazing!
Keep in mind, that spinach wilts when cooked and will practically shrink to nothing when it’s sautéed. So you may need to buy a bunch of spinach depending on how many servings you will need.

Recipe Tips
- This recipe will make 2 to 4 servings, depending how much you serve.
- If you need additional servings, you can double all the ingredients.
- We used one ripe tomato, but if you prefer you can add additional tomatoes.
- As a side dish, you can easily serve with all meat, poultry and fish.
Ingredients Needed:
- Olive oil
- Garlic cloves
- Ripe tomato
- Package of Fresh Baby Spinach
- salt and fresh cracked pepper, to taste
How to Make Sautéed Spinach with Tomatoes?
Find our full printable recipe card with measurements are located below. There are a few steps to making our sautéed spinach with tomatoes. It takes about 5 minutes to prep the vegetables, and about 3 minutes to sauté the spinach. So, let’s go over these 4 easy-to-follow steps so you can understand what’s involved before you start.
1. In a medium-size skillet, heat olive oil and add garlic. Simmer on low heat for a few minutes, stirring until the garlic is translucent, about 2 minutes.
2. Toss in the diced tomato and sauté for a few minutes, until tomatoes soften. Season with a little salt and pepper, to taste.

3. Toss in the baby spinach, and cover with a lid. Simmer on low flame for about 2 to 4 minutes. Stirring occasionally the spinach to infuse all the flavors together. Spinach will be done as soon as it wilts.
4. Taste, and season with salt and pepper, if desired. Turn off the heat and transfer to a serving plate and serve.
Storing
If you have any leftovers, you can easily store them in a sealed container and keep it chilled in the refrigerator, and for up to 2 days. We do not recommend freezing this dish. It will not hold well when its thawed.

Sauteed Spinach with Tomatoes
Sauteed Spinach with Tomatoes is a simple and easy dish that's ready in minutes! This recipe makes a wonderful side dish that will compliment any meat, poultry and seafood, and will soon become a new favorite!
Ingredients
- 2 Tbsp. olive oil
- 3 garlic cloves -sliced
- 1 ripe tomato- diced
- 10-ounce (up to 16-ounce) fresh baby organic spinach
- salt and fresh cracked pepper, to taste
Instructions
- In a medium-size skillet, heat olive oil and add the garlic. Simmer on low heat for a few minutes, stirring until the garlic is translucent, about 2 minutes.
- Add in the diced tomato and saute for a few minutes, until it softens. Season with a little salt and pepper, to taste.
- Toss in the baby spinach, and cover with a lid. Simmer for a few minutes. Remove cover and stir the spinach to infuse all the flavors together. Spinach will be done as soon as it wilts.
- Taste, and season with salt and pepper to taste. Turn off heat and transfer to a serving plate and serve.
- Serves 2 to 4
