Ingredients Overview…

For our roasted artichokes recipe, you will need the following ingredients:

ARTICHOKES: Choose fresh artichokes that are either medium-sized or small ones, these are best. The large artichokes are best for stuffing.

SEASONINGS: You will only need some salt, black pepper, and garlic powder for these to be flavorful.

BREAD CRUMBS: Choose plain bread crumbs for a nice crunch in every bite.

CHEESE: We prefer to use 2 kinds of grated cheeses. Grated parmesan and pecorino cheese, and you will only need a small amount to scatter over them.

LEMONS: Fresh lemons are a must! You will need some fresh lemon juice to scatter over the chokes, and a few slices to scatter around on the baking sheet.

OLIVE OIL: Choose a good quality of extra virgin olive oil to drizzle over the chokes just before they go into the oven to roast. Olive oil will give them flavor and keep them moist while roasting.

  3. Do we need to dry them after rinsing and before roasting? No, the chokes need to be wet. They need the moisture when roasting.
  4. How long do we roast them? Roast them for about 15 to 20 minutes, until you can pierce a fork through them easily. They should be golden brown and crispy on the edges.
  5. How can we tell they are ready? When you can pierce a knife or fork into them easily, then you know they are ready to come out of the oven.
