Good idea to double the recipe and make two! One to bake for dinner, and one to freeze for the future!
Not All Casseroles are Freezable…
- It all depends on what’s in it.
- Most casseroles that freeze well have chicken or ground beef, some sort of noodles, pastas, some vegetables, and sauce.
- But, anything with mashed potatoes would probably not freeze well (like a Shepherd’s Pie). Simply because there is milk in the mashies.
- Also, anything with mayonnaise (unless blended with another ingredient like sour cream) will not freeze well.
- And, of course, any salad-type vegetables like lettuce, cucumbers, and raw tomatoes. These contain too much water and don’t hold up when frozen. They will become very mushy and not very appealing.
Freeze Casseroles Before or After Baking?
Some people prefer to freeze their dishes before baking to prevent them from drying out, while others find that it works well either way. It’s important to slightly undercook the pasta and rice to ensure they don’t become mushy when the casserole is baked.
