Broccoli and Cheese Casserole

A new spin on a classic Broccoli and Cheese Casserole that’s easily made with broccoli florets and a cheesy sauce.  Then it is baked until the cheese is melted and the top is golden brown.  A wonderful side dish to serve family and guests, and they will keep coming back for more!

Broccoli and Cheese Casserole

A delicious recipe, this broccoli and cheese casserole is a winner!  Take our word for it. It is a simple recipe that is easy to put together, and into the oven it goes!

We love broccoli, no question about it. We have a few of our faves, like our Best Broccoli Salad, and our Roasted Broccoli and Cauliflower with Wine & Cheese, just to name a few.

But this broccoli and cheese casserole is amazing and positively delicious, and one your family and friends will ask for seconds!

Besides, it not only makes a perfect side dish to serve any day of the week, but it’s a great way to get more broccoli into your meals.

With a few simple ingredients, you can easily turn plain broccoli into this flavorful casserole!

How to Make This Casserole?

There are 3 easy steps to making this casserole.

1. First Step: Cook the frozen broccoli florets.

2. Second Step: The cheese sauce is easily made with 5 ingredients and blended with tender broccoli.  Then it is transferred to a casserole dish and topped with a thin layer of bread crumbs and grated Parmesan cheese.

3. Final Step: Bake for 25 minutes, remove, and it’s ready to serve.

Easy-peasy  … and Totally Delicious! 

There’s no need for any additional ingredients.  Plus, no condensed or creamed soups are needed for this recipe.

 COOK’S NOTES and TIPS…

  • If you are looking to make this broccoli casserole gluten-free, omit the bread crumbs and flour, and use gluten-free crumbs along with almond or oat flour.
  • You may even omit the flour altogether and use half-and-half cream instead of milk.  The half-and-half will thicken as it bakes into a creamy, cheesy broccoli casserole.
  • This was one of the first casserole dishes we posted when we started years ago, and the recipe is adapted from my dear neighbor and friend, Dorothy Cook.
  • The original recipe calls for crumbled saltine crackers on top (to offer some crunch), but I decided to top it with some bread crumbs and Parmesan cheese instead.
  • I love the ease of throwing everything together and placing it into the oven.  And, you will too!

Options to Serve it With…

You can serve this broccoli and cheese casserole with your favorite main dishes. Here are a few ideas and options for you to choose from:

Ingredients Needed for Broccoli and Bleu Cheese Casserole:

  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 (4 ounces) cream cheese, softened
  • 1/4 cup crumbled bleu cheese
  • 1+ 1/4 cups milk
  • 3 (10-ounce) packages of frozen broccoli florets – steamed, drained
  • 1/4 tsp. salt
  • 2 tsp. plain bread crumbs (or 1/4 cup crumbled saltine crackers)
  • 2 tsp. grated Parmesan cheese
  • olive oil cooking spray

 

Directions To Make Broccoli and Cheese Casserole: 

1.  Preheat the oven to 350 degrees.  Lightly spray a 2.5 or 3-quart baking dish with cooking oil. Set aside.

2.  In a large saucepot with 2 inches of water, add 3 packages of frozen broccoli florets and salt. Cover and bring water to a boil, and boil for 2 minutes. Turn off the heat and drain the broccoli. Return broccoli to the pot and cover, allowing broccoli to steam for a few minutes.

3.  In the meantime, in a small saucepan, whisk together butter and flour, then add in the milk, cream cheese, and blue cheese on low heat.  Stir mixture until mixture comes to a low boil and the cheeses have completely melted. Turn off the heat.

4.  Pour into the broccoli and mix until well combined.

5.  Transfer broccoli and cheese mixture into a 2.5 or 3-quart casserole baking dish and top with a light layer of plain bread crumbs and then with grated Parmesan cheese.

6.  Bake in the oven for 20 to 25 minutes, or until the top turns golden and the sides are bubbly.  Remove and allow to sit for 5 minutes before serving.

Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 (4-ounces) cream cheese, softened
  • 1/4 cup crumbled bleu cheese

  1. I love this recipe and will be making it for New Year’s. If I use fresh broccoli, how much should I use?

    1. Hi Patti! So glad you will be making this recipe. The recipe calls for (3 (10-ounce) packages of frozen broccoli florets) therefore, for fresh broccoli, you will need at least 2 pounds of fresh broccoli, then chop and steam it until it is tender, and follow the rest of the recipe.
