How to Make our Crispy Stuffed Chicken Breasts? (Step-by-Step photos)
For this recipe, you will need the 3 chicken breasts, plus a few Italian ingredients, and a large skillet with a lid. First, you will need to prepare the chicken breasts for stuffing and make the stuffing mixture:
- In a mixing bowl or breading pan, stir together the bread crumbs, grated pecorino cheese, parsley, garlic powder, and black pepper.
- Slice each breast horizontally almost through, but keep the other end intact.

Next: Stuff each Chicken Breast (photo steps 1-3)
3. Add about 2 tablespoons of the breadcrumb mixture into each breast cavity.
4. Next, drizzle over the breadcrumbs with some EVOO.
5. Then lay 1 slice of provolone cheese (folded in half) on top ot the bread crumb mixture.

6. Add the prosciutto slices, about 3 slices of prosciutto on top of that.
7. Then close the breast (fold over the other half to close it). Stuff the remaining breasts the same way. (in photos 4 & 5 below)

8. In a large non-stick skillet, heat 1 tablespoon of olive oil. Carefully pick up the stuffed breasts with both hands and place them into the skillet.
QUICK NOTE: Here is where you can sprinkle over each chicken breast with some of the remaining bread crumbs/cheese mixture. Then cover with a lid.

9. Cook the breasts on moderate heat for 5 to 8 minutes per side. Use kitchen tongs to carefully turn each breast over. NOTE: If you feel the need to cover it with a lid (to prevent splashing), then go ahead and do it. The total cooking time is about 20 to 25 minutes. Remove and serve.

Q & A…
1. How many servings does this recipe yield? This recipe yields 3 servings, but you can easily double the ingredients to make more.
2. Can we “stuff” with other kinds of cheeses? Yes, you can. Try Swiss, Gruyere, or Fontina; they will work well.
3. Can we make them gluten-free? Yes, try GF “corn” bread crumbs.
4. Is it OK if we add some white wine? We never say no to wine! Yes, you may add some white wine, but do it at the end of the cooking. This will make them juicy, and of course, less crispy, but that’s ok because the wine will always add a savory note to our already flavorful stuffed chicken.
5. How to store leftovers? You can easily place them into a glass container with a lid, or cover the chicken breast with clear wrap, and store it in the refrigerator. The chicken will stay fresh for up to 2 days.
6. Can we freeze leftovers? You can freeze them for up to 2 months. After that, discard them and cook a new batch.
