Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes


  • 2 medium size eggplants ( about 1 pound)
  • 2 to 3 Tbsp. extra virgin olive oil
  • 1/4 tsp. salt
  • fresh cracked black pepper, to taste


  1. Preheat oven to 450 degrees F. (232C).
  2. Cut and chop eggplant into 1-inch cubes or pieces and transfer them to a large baking sheet.
  3. Sprinkle with salt over them, then with some fresh cracked black pepper.
  4. Bake for 20 minutes, remove from oven and use a spatula to turn them over and continue to bake for additional 10 to 15 minutes, until they are golden brown and fork-tender.
  5. Remove and serve or use it with some of most popular eggplant recipes!


Make sure the eggplants are fully cooked, otherwise they will turn out tough instead of tender and if undercooked they will turn out bitter, with an unpleasant taste.
