Tender and Flavorful Skillet Chicken Mushroom Dinner

My family craves chicken dinners from time to time. This skillet chicken mushroom dinner gives an upgrade to simple (and sometimes boring) chicken breasts, making them a flavorful, restaurant-quality chicken dish we all love.

It’s similar to our Chicken Smothered in Marsala & Mushrooms recipe, only this one is gluten-free, made without flour, and we used white wine instead of Marsala.

Tender chicken breasts are sautรฉed and smothered in a tasty mushroom sauce, made with white wine, a touch of cream, and fresh herbs.

It’s so delicious that everyone will love this skillet chicken and mushrooms dinner. And an easy meal to put together and serve. We can’t wait for you to try this recipe.

If you love easy recipes for skillet chicken dinners, then don’t miss our mom’s best chicken piccata, chicken with dijon wine cream sauce, and chicken tenders smothered in lemon and parsley. These are just as popular as our Skillet Chicken Mushroom Dinner.

Recipe Highlights & Tips:

  • This recipe calls for 2 chicken breasts. Keep in mind, it will make enough for 3 to 4 servings.
  • Increase the amount: You can easily double the ingredients for more servings.
  • Building layers of flavor! Like most skillet recipes, we need to build the layers of flavor. Each step is important to get the most flavor and aromatics from each ingredient, making the chicken savory, juicy, and flavorful.
  • Prefer a thicker sauce? Stir in one teaspoon of cornstarch with some white wine, allow it to dissolve, then pour it into the skillet. Allow the sauce to simmer to reduce and thicken.

Cut the Chicken Breasts in half diagonally!

For this recipe, we prefer to buy boneless and skinless breasts. Best to slice the chicken breasts horizontally to create thinner pieces. This helps the chicken cook quickly, more evenly, and ensures the chicken is fully cooked. Plus, it will give you additional servings.

You can buy them already sliced from your local butcher or in a local supermarket, packaged as cutlets. Another alternative is to use whole chicken breasts and have them pounded to an even thickness, and brown them a little longer.

What kind of mushrooms are best for this Skillet Chicken Mushroom Dinner?

For this recipe, we love the white-button mushrooms. And, we always look for the best-looking mushrooms on the shelf. These are the “most popular” mushrooms and can be easily found in any supermarket. Plus, we prefer the “already sliced” mushrooms to help speed up the prep work. For this recipe, you can also use Baby Bella’s or a mixture of the two.

How to clean the mushrooms? Do we rinse or rub them?

Whether you purchase the mushrooms “whole” or “sliced,” they will contain some dirt residue. We prefer to lightly rinse the mushrooms (and even rub them if we have to) to get rid of any soil. Then allow them to drain well in a colander before cooking them.

Also, if you buy whole mushrooms, use the entire mushroom. Cut off the woody, rough ends and discard them before slicing and cooking them.

How to serve with Skillet Chicken Mushroom Dinner?

You can serve this skillet chicken dinner alone with a light soup as a starter, or with a fresh green salad and some crusty bread to soak up that yummy wine sauce. In addition to a green salad, you can serve this chicken dish with any of these options as well.
