Spring has arrived! And we’re thrilled to share these 13+ delicious recipes for April. The weather this month can be unpredictable, often bringing a mix of showers along with warm and cool days. This is also the time when flowers begin to bloom, and we can look forward to more sunny days ahead.

A fun fact about April (the Fourth Month):

April is known as the fourth month of the year and is associated with spring. The name “April” comes from the Latin word “Aprilis.” And, the Roman authors believed it was connected to the verb “aperire,” which means “to open,” referring to the opening of flower and leaf buds during this season.

5. The BEST- Fresh Tasting Honey Mustard Dressing is the perfect dressing to make this season. It is an ideal dressing to keep in a mason jar for a variety of salads, including our endive pear salad, and even to top chicken dishes. It is so good, you’ll wonder why you haven’t made it before!

Some Comfort Recipes For April…

6. Delicious Crab Cakes – Lightened! Lumps of crab meat mixed with only an egg, some bread crumbs, and enough mayonnaise and Dijon to hold it together.  Then they are topped with a dab of butter and broiled to a golden brown color. They turn out perfect every time.

7. These Lemon Zucchini Poppy Seed Muffins are amazingly delicious and dairy-free! Make these on the weekends, and serve them with your morning coffee or tea. Everyone will LOVE them!

8. Our classic Chicken Rollatini with Prosciutto and Cheese is an easy recipe made with chicken cutlets rolled with sliced prosciutto and cheese stuffed inside and baked until golden and crispy! YUM!

9. These Roasted Eggplant Meatballs are “meatless” meatballs! These are amazingly moist and delicious-tasting! A genius way to serve meatballs without meat! Easy to make, then roast!

12. Best Vegetable Lasagna is made with 3 layers of vegetables: zucchini, mushrooms, and spinach, all smothered with a simple tomato sauce, and topped with melted cheese. And, it is divine! This one should be on rotation!

13. The most delicious Creamy Asparagus Risotto is a quick and easy recipe brimming with fresh asparagus and Italian Arborio rice.  Simmered in one pot and ready in 20 minutes, this risotto is a terrific meal! Make it on the stove-top or in the Instant Pot; both methods are included.
