Where do these mini zucchinis come from?

Baby zucchinis come from France, and they are also called courgettes. They are not fully grown, and because of that, they contain some peppery notes and grassy undertones.

How to bake these baby zucchinis?

For this recipe, you will need the following ingredients:

  • baby zucchinis
  • cherry or grape tomatoes
  • extra virgin olive oil
  • seasonings: salt, black pepper, and garlic powder
  • fresh basil

1. First Step: You will need to slice the mini zucchinis in half, lengthwise. Toss them in a large roasting pan. Then slice the grape or cherry tomatoes and toss them into the pan as well.

2. Second Step: Scatter with the seasonings, and drizzle with extra virgin olive oil over them. Use a spatula or a wooden spoon to toss them to coat them evenly.

3. Final Step: Transfer to a preheated oven and bake for 25 to 30 minutes. Top with some freshly chopped basil, then serve.

Baby Zucchini are easily baked with cherry tomatoes, seasonings, and extra virgin olive oil until perfectly tender. A no-fuss, simple side dish that is delicious tasting, and will complement any entrรฉe you serve it with.

Cook Time 25 minutes
Total Time 35 minutes

Ingredients

  • 2 packages of baby zucchini (24 ounces) - rinsed, sliced in half lengthwise
  • 1 pint of cherry or grape tomatoes - about 15, sliced in halves
  • 1/4 tsp. garlic powder
  • 1/4 tsp. salt
  • freshly cracked black pepper
  • 3 Tbsp. extra virgin olive oil
  • fresh basil - chopped

Instructions

  1. Preheat the oven to 375 degrees F (190C).
  2. In a large baking dish, toss in the sliced baby zucchini, along with cherry tomatoes.
  3. Scatter with all the seasonings and drizzle with extra virgin olive oil over them. Use 2 spoons, or your hands and toss everything to coat and combine the baby zucchini and cherry tomatoes evenly.
  4. Bake for 25 to 30 minutes, until the zucchini are fork-tender. Remove, top with some freshly chopped basil. Transfer to a serving platter and serve.
  5. Yields: 6 servings

Notes

Quick Note: if you prefer your vegetables to be crunchy rather than soft and tender, then bake them in less time.
