Notes & Tips for Success:

  • No fancy equipment is needed. But it’s best to use a large, deep skillet for this recipe and with a cover.
  • I tossed in a few handfuls of baby spinach, but you can toss in as much as you like.
  • For this recipe, it is best to undercook the pasta for 1 minute or so. It needs to have a nice bite to it because it will finish cooking with the cream sauce.
  • It’s best to wait until the wine has been fully absorbed before pouring in the cream.
  • As the creamy sauce thickens, you can add some pasta water to make it thinner and lighter in texture.
  • Always taste the sauce before serving and adjust the seasonings to your liking.
  • Keep in mind, that the longer the pasta sits in the skillet, the more it will absorb the cream sauce.
  • Also, I used one large tomato, but you can use 2 or 3 small ripe tomatoes.

The Key Ingredients You’ll Need:

For this easy all-in-one skillet dinner, you will need the following ingredients:

  • Extra Virgin Olive Oil – a good quality olive oil is recommended.
  • Chicken Cutlets – one package of thin, skinless chicken cutlets, about 2 to 4 pieces.
  • Fresh Vegetables – one or two ripe tomatoes, and a package of baby spinach.
  • Garlic Cloves – two cloves of garlic are enough.
  • Sundried Tomatoes – you will need about 4 tablespoons of chopped sundried tomatoes in oil.
  • Wine – and drinking white wine is perfect, and about 1/4 cup is good.
  • Light Cream – some half-and-half will make this dish very light and creamy.
  • Pasta – we used farfalle pasta, which is perfect for this dish.
  • Parmesan Cheese – grated Reggiano-Parmigiana cheese is good quality and best to use with this recipe.
  • Seasonings – some salt, black pepper, and cayenne pepper, or crushed red pepper flakes for some heat.
