Cinnamon Swirl Quick Bread

Besides its cake-like texture, the flavor of cinnamon really pops in this quick bread, just like the popular easy cinnamon rolls we enjoy baking from time to time.

What is a Quick Bread?

  • Quick Bread is basically a bread recipe made without using any yeast. These bread recipes rely upon leavening agents likeย baking powder and baking soda to make them rise.
  • Plus, there’s no need to knead or work the dough before baking either, making it practically effortless. The batter goes from the bowl into the loaf pan and then into the oven to bake.
  • Like most quick bread recipes, they are made with a few staple ingredients you have on hand. Plus, they usually need additional baking time, about 1 hour or so.
  • Also, the texture of quick bread is different. It has a cake-like texture, similar to muffins, scones, cornbread, and even biscuits, just to name a few.

For this easy Quick Bread recipe you will need:

How to Make Cinnamon Swirl Quick Bread… (*full recipe card below)

For this recipe, you will need one large bowl to mix the ingredients, and two small bowls, one for the cinnamon-sugar mixture and the other for the glaze.

  1. First, preheat the oven to 350 degrees F (180C). Grease and flour one 8.5 x 5 (or a 9 x 5) loaf pan and set aside. Or you can cut two pieces of parchment paper and place them inside the loaf pan.
  2. In a large mixing bowl, whisk together all the dry ingredients.
  3. Then make a well in the center, and add the liquid ingredients. Whisk until the mixture is well combined and no visible lumps. No need to over-stir. Pour only half the batter into the prepared loaf pan. Set it aside.

4. In a small mixing bowl, stir together sugar and cinnamon. Scatter on top with half (about 4 tablespoons) of the cinnamon-sugar mixture.

5. Next, add the remaining batter over the cinnamon-sugar mixture. Top with the remaining cinnamon-sugar mixture.

6. Take a knife, insert it into the mixture, and slowly swirl from one end of the loaf pan to the other end and back again, creating an “S” while swirling the knife. Do this a few times.

7. Transfer the quick bread onto the middle rack in your oven. BAKE for 50 to 60 minutes, or until the toothpick inserted comes out clean. Allow the bread to cool in the pan for 10 to 15 minutes.

8. Then Make the Glaze: Stir the ingredients with a fork, and drizzle the glaze on top. Allow the bread to cool completely before slicing or it will fall apart.

Baking Notes and Tips for Success…

  • As soon as the scent of cinnamon permeates throughout the kitchen, that is a good indication that the bread is almost fully baked. So keep an eye on it because all ovens are different and baking times can also vary.
  • It’s best to check if the bread is done with a toothpick inserted in the bread and comes out clean.
  • Keep in mind, that you will have to wait until the bread is completely cooled before slicing it. If you slice into the bread while it is still warm, it will fall apart.
  • If you plan to freeze the bread, it’s best Not To Glaze it. Glaze the bread only if you’re planning to serve it.

Questions & Answers…

1. Can we add raisins? Yes, you can. You can fold in the raisins before you divide the batter in half and about 1/4 cup, will be fine. Also, cranberries would be delicious too.

2. Can we add in nuts? You may add chopped walnuts or pecans with this recipe, about 1/4 cup.

3. How many servings does it yield? All quick loaves of bread usually yield about 10 to 12 servings, depending on how thick or thin you slice the bread.

Storing and Freezing Quick Bread…

  1. Storing Quick Bread: We prefer to keep this cinnamon swirl quick bread on the counter, on a plate, and covered with clear wrap. Because it is so good, it will stay fresh for up to 3 days at room temperature (if it lasts that long!).

2. Freezing: It’s best to allow the bread to cool completely before freezing. Also, it’s a good idea to not glaze the bread if you are planning to freeze it because the glaze will end up falling off the bread when it’s thawed.

3. How to Wrap the Bread? First, wrap the bread with clear wrap, and then wrap it with foil. This will seal it tight and will avoid any freezer burns while freezing. Then transfer the bread into your freezer. Cinnamon swirl quick bread will freeze well for up to 2 months.

Ingredients

  • 2 cups ( 240g) unbleached all-purpose flour
  • 1 cup (200g) granulated sugar (or light brown sugar)
  • 4 tsp. baking powder
  • 1/2 tsp. kosher salt
  • 1 cup (240g) fat-free milk (or non-dairy milk)
  • 1 whole egg
  • 1/4 cup (54g) canola oil

Cinnamon-Sugar Mixture:

  • 1 Tbsp. ground cinnamon
  • 1/2 cup (100g) sugar

Vanilla Glaze:

  • 1/2 cup (50g) + 2 Tbsp. powdered sugar
  • 3/4 tsp. vanilla extract
  • 2 tsp. milk (or non-dairy milk)

Instructions

    MAKE THE GLAZE:

    1. In a small bowl, stir with a fork to combine powdered sugar, vanilla, and milk. The mixture should be very thick.

    2. When the bread is completely cooled, drizzle the glaze on top, diagonally across the top. Drizzle as much or as little as you like.

    Yields: 10 to 12 servings

Notes

  • When the delicious aroma of cinnamon starts to fill your kitchen, that is an indication the bread is nearly done. So keep an eye on the bread and check to see if it is ready with a toothpick.
  • Also, remember to wait until the bread is completely cooled before slicing it. If you slice into the bread while it is still warm, it will fall apart.
